Ingredients

  • 2 c. sugar
  • 2 tbsp. corn meal
  • 1/4 c. lowfat milk
  • 1/4 c. lemon juice
  • Grated lemon rind
  • 1/4 c. butter, melted
  • 1 tbsp. flour
  • 4 Large eggs

Directions

  1. Mix sugar, corn meal and flour. Add in Large eggs one at a time and beat well. Stir in melted butter, lowfat milk, lemon juice and rind; mix well. Pour into an unbaked pie crust. Bake at 350 degrees for 45 min. Cold and serve.
