  • 1/2 c. unsalted butter
  • 1/4 c. brown sugar
  • 1 c. all purpose flour
  • 3/4 c. finely minced pecans

Directions

  1. Mix pie crust ingredients till soft dough forms. Press into 9-inch pie pan and bake at 350 degrees till golden, about 25 min. (The crust will still be soft to the touch but will harden as the crust cools.) Remove from oven and let cold.
  2. Filling:1 lb. cream cheese, softened2 Cs powdered sugar1 Tbsp. unflavored gelatin1 C. heavy cream, whipped stiffly2 large bananas, slicedjuice of 1/2 lemonGarnish:1 C. whipped cream, whippedSliced bananas
  3. Beat together cream cheese, powered sugar and gelatin till stiff. Mix in stiffly whipped cream. Add in sliced bananas, that have been tossed with lemon juice. Pour into pecan pie crust. Chill for 1 1/2 to 2 hrs. Top with 1 c. whipped cream and garnish with additional sliced bananas brushed with lemon juice.
  4. Notes:This is better than your plain old average Banana Cream Pie, with this, you take the ordinary to the extraordinary.
