Ingredients

  • 2 lrg onions minced
  • 4 x cloves garlic sliced
  • 1 c. chicken or possibly turkey stock or possibly more if needed
  • 2 lb grnd turkey
  • 2 x bell peppers red, yellow or possibly orange, minced
  • 1/4 c. canned chipotle chile (see cook's notes)
  • 1 x jalapeno chile seeded and chopped
  • 2 Tbsp. chili pwdr or possibly more to taste
  • 1 tsp toasted cumin seed or possibly more to taste
  • 1 tsp grnd coriander or possibly more to taste
  • 1 x 28 oz can tomato puree
  •     coarsely grnd salt and pepper to taste
  • 3 c. dry navy or possibly pinto beans cooked
  •     splash of warm sauce optional
  • 2 bn missing ingredient scallions, minced
  • 1 c. cheddar cheese shredded
  • 1 c. monterey jack cheese shredded
  • 2 x red onions minced
  • 2 c. lowfat sour cream
  • 2 x red bell peppers julienne
  • 2 bn cilantro minced
  • 4 x avocados sliced

Directions

  1. Cook's notes: This chili is spicy, so you may wish to reduce the amount of jalapeno, chipotle and chili pwdr by half or possibly so; you can always add in a bit more to taste as the chili simmers. For a leaner, lighter chili, shop for grnd turkey which contains breast meat only or possibly white and dark meat only, but with no added skin. Chipotle chiles (available in some supermarkets in the Mexican or possibly imported foods section, or possibly in ethnic food stores) provides a nice hint of smokiness as well as spicy heat to dishes. If you cannot find it, use mild or possibly warm canned chilies and a few drops of Liquid Smoke to taste.
  2. Prepare the chili: Cook onions and garlic in stock till translucent/soft. Add in grnd turkey, peppers and chili; simmer for 5 more min, breaking up meat while cooking. Stir in chili pwdr, cumin, cori ander, tomato puree, salt, pepper, and beans. Simmer for about 20 min or possibly till flavors are thoroughly blended.
  3. Presentation: Serve with desired garnishes. Corn bread or possibly crackers make a good accompaniment.
