Ingredients

  • 2 tablespoons canola oil
  • 1 yellow onion, sliced
  • 2 garlic cloves, peeled
  • 2 ripe medium-small tomatoes, roasted or boiled, cored and peeled OR 1 15 oz. can diced tomatoes, drained
  • 1 1/2 quarts faux chicken broth (made by mixing 1 1/2 quarts boiling water with 2 tbsp. Better Than Bouillon Vegetarian No Chicken Base)
  • Salt to taste
  • Tortilla chips/strips
  • Fresh chopped cilantro, for garnish
  • Fresh thinly-sliced green cabbage, for garnish
  • Fresh finely chopped radishes, for garnish
  • Fresh chopped avocado, for garnish
  • Red chili flakes
  • Lime wedges
