,%20you%20know%20that%20fresh%20and%20hot%20out%20of%20the%20oven,%20the%20wedge%20of%20casserole%20pretty%20much%20collapses,%20leaving%20a%20gloppy%20but%20delectable%20mess.%3C/p%3E%3Cp%3EMost%20tortilla%20casseroles%20that%20I%20make%20are%20convenience%20food,%20whipped%20up%20fast%20out%20of%20my%20head%20using%20ground%20beef%20and/or%20beans%20or%20leftovers.%20But%20for%20this%20one%20I%20decided%20to%20braise%20a%20beef%20chuck%20specifically%20for%20the%20casserole.%20After%20browning%20the%20beef,%20I%20saut%C3%A9ed%20onions%20and%20deglazed%20the%20pan%20with%20lager.%20I%20then%20braised%20the%20beef%20in%20a%20very%20low%20oven%20with%20the%20rest%20of%20the%20beer%20and%20a%20few%20glugs%20of%20green%20salsa%20(storebought%20is%20fine%E2%80%93just%20try%20to%20find%20one%20without%20a%20lot%20of%20unpronounceable%20ingredients;%20I%20prefer%20ones%20with%20tomatillos).%3C/p%3E%3Cp%3EWhen%20the%20beef%20was%20done,%20I%20de-boned%20it%20and%20cut%20off%20all%20the%20fat%20(reserve%20the%20beer/beef%20stock%20it%20cooked%20in).%20I%20then%20chopped%20the%20remaining%20meat.%20I%20saut%C3%A9ed%20onions,%20garlic,%20bell%20peppers%20and%20added%20the%20chopped%20beef%20and%20an%20entire%20jar%20of%20salsa%20verde.%20I%20also%20added%20ground%20cumin,%20Mexican%20oregano%20and%20the%20beer/beef%20stock%E2%80%93one%20of%20the%20most%20important%20things%20to%20remember%20when%20whipping%20up%20a%20casserole%20is%20too%20make%20sure%20it%20has%20extra%20liquid%20to%20cook%20in.%20Otherwise%20you%20will%20risk%20the%20casserole%20drying%20out%20in%20the%20oven.%20Plus,%20you%20do%20not%20want%20to%20lose%20all%20that%20fabulous%20flavor%20that%20leached%20into%20the%20braising%20liquid.%3C/p%3E%3Cp%3EWhen%20layering%20the%20casserole,%20I%20used%20corn%20tortillas%20(be%20sure%20to%20get%20good%20ones%20from%20a%20Mexican%20bakery%E2%80%93I%20tried%20store-brand%20first%20and%20UGH!),%20the%20beef/veggies%20mix,%20shredded%20monterey%20jack%20and%20cheddar%20cheeses,%20and%20sour%20cream.%20Bake%20until%20bubbly%20and%20the%20cheese%20on%20top%20(end%20with%20the%20cheese)%20is%20melted.%20Serve%20with%20Tapatio%20Hot%20Sauce.%3C/p%3E%3Cp%3Ebeef,%3C/p%3E%3Cp%3Ebeef%20chuck,%3C/p%3E%3Cp%3Ebeer,%3C/p%3E%3Cp%3Ebraising,%3C/p%3E%3Cp%3Ecasserole,%3C/p%3E%3Cp%3Ecorn%20tortilla,%3C/p%3E%3Cp%3Elager,%3C/p%3E){kind=link}
