Top Ramen Crab Salad Recipe

Ingredients

  • 2 lb Mock crab
  • 1 bn green onions, minced
  • 5 x -6 stalks celery, minced
  • 12 x hard boiled Large eggs, minced
  • 4 pkt Top Ramen noodles (dry)
  • 1/8 c. fresh minced parsley
  •     garlic pwdr, salt and pepper
  • 2 c. mayonnaise (fat free works too)
  • 1 tsp vinegar
  • 1 tsp sugar
  • 1 tsp celery seeds
  • 3 c. lowfat milk

Directions

  1. In a large bowl... Break dry noodles into good sized chunks. Break crab into chunks. Add in celery, Large eggs and onions. Add in garlic pwdr, salt and pepper. In seperate bowl... using a wire whisk, gradually whisk lowfat milk into the mayonnaise till smooth, will be very runny. Whisk in remaining ingredients and mix well. Pour over noodle/crab mix and mix well (being careful not to crumble noodles) Cover. Chill over night. In the morning stir well. Re-cover and chill till ready to serve with meal.
  2. Note: I use Top Ramen noodles. Best Foods mayonnaise. Use freshest mock crab. This is a very large salad, great for pot luck gatherings. Recipe can be cut in half for smaller salad.
  3. This recipe is not my 'original'...it was served at a special occasion 'pot luck' luncheon and I requested the recipe. This was about 18 years ago.
