Tomato Rice (Nasi Tomato) Recipe

Easy to make tomato rice that goes well with my honey chicken sambal or egg sambal. This rice is made in a rice cooker but pressure cooker should be fine as well.

  • 2 1/4 cup of India Gate Basmati Rice
  • 1 Pandan leaf (optional)
  • 1 cinnamon stick
  • 2 cardamon
  • 1 tsp ginger & garlic paste
  • 1/2 tomato - sliced
  • 1/2 onion - sliced
  • 3 tbsp tomato puree
  • Salt & sugar to taste
  • oil">Ghee/Oil for frying

Directions

  1. Wash and soak the rice for 30 minutes (helps the rice to expand) and drain water and let it stand for another 20 minutes.
  2. Heat ghee/oil in wok and add the rest of the ingredients except for the tomato puree, salt and sugar.
  3. Then add in the rice and mix well with the ingredients and transfer into a rice cooker.
  4. Mix the tomato puree, salt and sugar into the rice and let it cook.
  5. Note: Once rice is done, you may find some of the puree scattered here and there; simply mix it throughly with the rice.
