Ingredients

  • 2 1/4 cups unbleached all-purpose flour
  • 1 teaspoon salt
  • 2 sticks unsalted butter, cubed and very cold
  • 3/4 cups sour cream
  • 4 to 5 tablespoons ice water
  • For the filling:
  • 2 1/2 pounds assorted tomatoes
  • 2 teaspoon salt (separated)
  • 1 cup chopped Vidalia onion
  • 1 3/4 cups grated Gruyere cheese
  • 1/2 cup grated Parmesan cheese
  • 3/4 cup Hellmann's mayonnaise
  • 1/2 cup basil chiffonade
  • 1 tablespoon chopped fresh thyme
  • 1/4 teaspoon pepper
  • 1 egg, beaten
