Ingredients

  • 2 c. V-8 juice
  • 1/4 c. chopped red onion
  • 1 c. minced tomato
  • 1/2 c. diced yellow bell pepper
  • 1/2 c. peeled and diced cucumber
  • 1 c. minced scallions
  • 1/3 c. minced parsley
  • 1/4 c. minced fresh basil
  • 1 1/2 tsp sugar
  • 1 clv garlic, chopped
  • 2 Tbsp. fresh lime juice
  • 1 Tbsp. balsamic vinegar
  • 1 x salt and pepper to taste
  • 1/4 c. lowfat sour cream
  •     Diced hard-boiled egg
  •     Croutons

Directions

  1. Combine V-8 juice, red onion, tomato, bell pepper, cucumber, scallions, parsley, basil, sugar, garlic, lime juice, vinegar, salt and pepper in a large bowl; stir to combine. Remove half the mix and puree in a blenderor food processor. Return pureed mix to bowl and stir to combine.
  2. Cover and chill overnight for flavors to develop. Serve chilled with a dollop of lowfat sour cream and other garnishes, if you like.
