Directions

  1. Preheat oven to 350 degrees Fahrenheit.
  2. Trim the ends off the zucchini and cut them into very thin rounds. Quickly blanch in boiling salted water.
  3. Core the tomatoes but don't peel them. Cut the tomatoes in rounds the same thickness as the zucchini.
  4. Place six 4-inch ring molds on an oiled baking sheet. Inside the ring molds, arrange overlapping slices alternating the green and yellow zucchini and tomato. Season and drizzle with extra virgin olive oil. Sprinkle with breadcrumbs. Lift off the rings and bake the vegetables in the oven for 10 min.
