Ingredients
- 1 med Vine-ripened tomato
- 1/2 c. Loosely packed basil leaves
- 2 Tbsp. Minced Italian parsley
- 1/2 tsp Chopped garlic
- 1 Tbsp. Balsamic vinegar
- 1 tsp Lemon juice
- Â Â Salt
- Â Â Freshly grnd black pepper
Directions
- Core the tomato and cut in half. Grill over very warm coals for only a few min to take on some color and flavor. Remove from the grill and set aside to cold.
- Place the basil, parsley, and garlic in a food processor. Process till smooth. Add in the tomato, vinegar and lemon juice and process. Season with salt and pepper to taste.
