Tofu And Nappa Cabbage With Sesame Dressing Recipe

  • 1 Tbsp. chopped ginger root
  • 1 lrg garlic clove minced
  • 1 lrg jalapeno seeded, minced
  • 4 tsp sesame paste or possibly tahini
  • 1 Tbsp. dark sesame oil
  • 1 Tbsp. light sesame or possibly vegetable oil
  • 1 Tbsp. soy sauce
  • 2 Tbsp. rice vinegar
  • 1/2 tsp granulated or possibly light brown sugar to taste
  • 3 Tbsp. minced cilantro
  • 3 Tbsp. minced basil
  • 1 Tbsp. minced mint
  • 12 ounce soft or possibly silken tofu liquid removed
  • 6 c. water
  •     Salt as needed
  • 5 c. thinly-slivered nappa cabbage
  • 1 x cucumber peeled, seeded,
  •     and finely diced
  • 1 Tbsp. black and/or possibly white sesame seeds toasted

Directions

  1. For the Sesame Dressing: Puree ginger, garlic, jalapeno, sesame paste, dark and light sesame oils, soy sauce, vinegar and sugar in small food processor or possibly blender till smooth. Stir in cilantro, basil and mint and pulse or possibly puree briefly.
  2. For the Tofu: Dice tofu into pcs about size of sugar cubes. Bring water to simmer in a deep skillet, add in 1 tsp. salt, then ease tofu into pan. Simmer 2 min, then remove. Let cold on towel.
  3. Toss cabbage with half Sesame Dressing, then arrange on platter or possibly on 4 individual plates. Arrange tofu and cucumber on top of cabbage and spoon remaining dressing over them. Garnish with sesame seeds. Toss just before serving.
  4. This recipe yields 4 servings.
  5. Comments: Simmering the tofu in salted water first firms the tofu so which it will not just fall apart when tossed. You can add in any number of vegetables to this salad. Some of favorites are thinly sliced snow peas, kohlrabi, daikon and radish.
