%20to%20me%20is%20the%20complex,%20difficult%20to%20describe%20way%20that%20the%20butter%20and%20sugar%20cook%20past%20the%20point%20of%20sweetness%20into%20darker%20territory.%20I%E2%80%99m%20not%20saying%20toffee%20is%20bitter.%20But%20it%20certainly%20carries%20the%20slightest%20suggestion%20of%20sinister%20intent.%20I%20think%20that%E2%80%99s%20what%20I%20like%20about%20it%20so%20much.%3C/p%3E%3Cp%3EHowever,%20cookies%20are%20a%20different%20story.%20Few%20sweets%20satisfy%20quite%20so%20many%20people%20as%20a%20perfectly%20baked%20cookie.%20Everyone%20loves%20them.%20They%20seem%20so%20sweetly%20innocent,%20with%20none%20of%20the%20dark%20mystery%20that%20I%20love%20about%20toffee.%20I%20like%20cookies%20too,%20but%20I%E2%80%99m%20persnickety%20about%20the%20texture.%20For%20me,%20the%20ideal%20cookie%20has%20a%20crumb%20that%E2%80%99s%20crisp%20and%20slightly%20caramelized%20on%20the%20outside,%20with%20a%20chewy,%20yet%20not%20raw,%20interior.%20The%20sweetness%20should%20be%20balanced%20with%20just%20a%20hint%20of%20salt.%3C/p%3E%3Cp%3EMilk%20Chocolate%20Toffee%20Cookies%3C/p%3E%3Cp%3EWhich%20is%20why%20I%20like%20these%20Milk%20Chocolate%20Toffee%20Cookies%20so%20much.%20They%20have%20the%20texture%20of%20my%20perfect%20cookie%20and%20the%20dark%20mystery%20of%20toffee.%20These%20Milk%20Chocolate%20Toffee%20Cookies%20are%20chewy,%20sticky%20and%20rich.%20I%20don%E2%80%99t%20think%20I%20need%20to%20say%20anything%20more%20amazing%20than%20that.%20GREG%3C/p%3E%3Cp%3EIngredients%3C/p%3E%3Cp%3EDirections%3C/p%3E%3Cp%3EPlace%20the%20oven%20racks%20in%20the%20top%20and%20center%20positions.%20Heat%20the%20oven%20to%20350%20degrees%20F.%3C/p%3E%3Cp%3ECombine%20flour,%20baking%20soda%20and%20salt%20in%20a%20small%20bowl;%20whisk%20to%20combine.%3C/p%3E%3Cp%3EIn%20a%20separate%20large%20bowl%20use%20an%20electric%20mixer%20to%20blend%20butter%20and%20both%20sugars%20until%20creamy,%20about%203%20minutes.%20Using%20a%20rubber%20spatula,%20add%20egg%20and%20vanilla%20until%20just%20combined.%20Fold%20in%20the%20flour%20mixture%20in%203%20additions,%20scraping%20the%20sides%20of%20the%20bowl%20until%20just%20incorporated.%20Gently%20stir%20in%20the%20chopped%20toffee%20bits%20and%20chocolate%20chunks.%3C/p%3E%3Cp%3ELine%202%20or%203%20rimmed%20baking%20sheets%20(depending%20on%20size)%20with%20silicon%20mats%20or%20parchment%20paper.%20Using%20a%201%20%C2%BD-inch%20scoop,%20drop%2024%20leveled%20balls%20of%20cookies%20dough%20onto%20the%20baking%20sheets,%20spaced%20at%20least%202-inches%20apart.%20Bake,%20rotating%20the%20sheets%20midway,%20until%20the%20cookies%20are%20crisp%20at%20the%20edges%20but%20still%20soft%20in%20the%20center;%20about%2012%20minutes.%3C/p%3E%3Cp%3ELet%20the%20cookies%20cool%20on%20the%20baking%20sheets%20about%205%20minutes,%20then%20transfer%20them%20to%20wire%20racks%20to%20cool%20completely.%3C/p%3E%3Cp%3ELike%20Loading...%3C/p%3E%3Cp%3EShare%3C/p%3E){kind=link}
