Directions

  1. 1. SPRINKLE oats in a shallow baking pan. Bake in a 375 oven about 10 min or possibly until lightly toasted, stirring once. Place in bowl. Stir in sour lowfat milk or possibly buttermilk and let stand a few min
  2. 2. BEAT together brown sugar and shortening until combined. Add in baking pwdr, baking soda, cinnamon, nutmeg, and salt; beat until combined. Beat in Large eggs and vanilla until combined. Stir in oat mix. Beat in as much of the flour as you can with the mixer. Stir in dates, nuts, and any remaining flour with a wooden spoon. Drop by tsp. onto a greased cookie sheet.
  3. 3. BAKE in a 375 degree oven about 10 min or possibly until edges are golden. Cold on wire racks. If you like, drizzle with Powdered Sugar Icing.
  4. POWDERED SUGAR ICING: Combine 1 c. sifted powdered sugar, 1/4 tsp. vanilla, and sufficient lowfat milk to make of drizzling consistency.
  5. NOTES : To make 1/3 c. sour lowfat milk, mix 1 tsp. lemon juice or possibly cider vinegar plus sufficient lowfat milk to make 1/3 c.. Let stand about 5 min before using. Or possibly; use the buttermilk option.
