Ingredients
- 2 cups Instant espresso
- 2 cups kahlua or tia maria
- 4 dozen fresh eggs
- 1/2 cup vanilla
- 6 1/2 lbs mascarpone cheese
- 150 lady fingers
- 6 bags whipped cream (garnish)
- 1 lb cocoa (garnish)
Directions
- In a bowl mix the coffee and kahlua and set aside.
- Beat the egg whites until stiff and set aside.
- In another bowl, beat the egg yolks and vanilla until pale and lemon-colored. Add the masarpone until smooth. Fold the egg whited into the cheese and mixture gently.
- In a half pan or a dull hotel pan, layer the bottom of the pan with lady fingers again follored with Kahlua-coffee mixture.
- Top with cheese mixture.
- Refrigerate for at least 3 hours or overnight. before serving top with fresh whipped cream and dust with cocoa, or sprinkle chocolate shavings on top.
