Tilapia with Wine and Tomatoes

Ingredients

  • 4 (4 oz) Tilapia fillets
  • salt and pepper to taste
  • 4 Tbsp. butter
  • 3 cloves garlic, pressed
  • 4 basil leaves, chopped
  • 1 cup white wine
  • 1 (15 oz) can DelMonte diced tomatoes ("flavor" optional)

Directions

  1. Preheat grill for medium-high heat or preheat oven to 350 degrees F.
  2. Place fillets on a large pice of aluminum foil (ends and sides crimped up) if grilling or in ungreased glass pan if baking.
  3. Season each fillet with salt and peper. Place one tablespoon butter on top of each fillet and sprinkle with garlic and basil.
  4. Pour wine and can of tomatoes over fillets.
  5. If grilling, fold foil up around fish and seal into a packet or use second piece of foil to cover, sealing in ends and sides. Transport to grill on a cookie sheet.
  6. Place foil packet on preheated grill or place pan in oven and cook for 15 minutes or until fish flakes easily.
