A cajun twist to the every day boring cauliflower. I was looking for a new way to get my veggies but not have that classic veggie taste. So, I decided to experiment one night with a head of cauliflower and came up with the new and exciting recipe.

Ingredients

  • 1 clove garlic
  • 1/4 cup of scallions and red onions combined
  • 1/2 pepper of choice ( I like Habanero or Pablano)
  • 1 head of Cauliflower
  • 2 tablespoons of butter
  • 1 teaspoon of olive oil
  • 1/2 cup of water
  • 2 tablespoons of sugar
  • 1 teaspoon of Milwaukee seasoning
  • 1 teaspoon of creole style seasoning (your choice)
  • grated cheese of your choice ( I like to use fresh blend of Parm. Asiago, or Monchego by itself)

Directions

  1. Take the cauliflower and cut the florets of off the head. Discard the actual stems for you don't use them. I like my heads diced but it is up to you on how you big you want your cauliflower. Dice the Garlic, Scallions, Onions, & Pepper of choice. Place butter, Olive oil and diced ingredients into the pan and brown on medium heat. After the Cauliflower has browned evenly spread the spices & sugar over the top and and stir into the cauliflower. Slowly stir in the water. Once everything is in the pan bring to boil for 2 minutes and reduce heat. Cover the Cauliflower and let simmer until the water has cooked out of the pan. Place Cauliflower in a bowl and cover with you favorite cheese.
  2. I have had this dish two ways. You can serve it on crackers or beget of bread for a party, or you can eat it as a dish by itself. Either way its delicious.
