The title of this recipe caught my eye, but I'm not sure I could find turtle here in Seattle, Washington. Would beef work instead?

Absolutely! There are several home cooks and even some New Orleans restaurants that make "Mock Turtle Soup" with beef, veal or a combination of the two. Of course, you can always order turtle meat from New Orleans. I have one link on that blog post. Another one is http://dennisseafood.com. Thanks for commenting!
