Ingredients

  • 1/2 c. Mild salsa
  • 1/2 c. Canned black beans liquid removed, rinsed
  • 4 x Flour tortillas
  • 4 slc Turkey
  • 8 ounce Monterey Jack cheese grated
  • 1 c. Shredded Romaine lettuce

Directions

  1. In the food processor, combine the salsa and the black beans. Blend till combined but still chunky. Lay out a tortilla and spread one fourth of the bean mix over it, leaving a 1/2-inch border. On the bottom half, lay a piece of turkey, 2 ounces of cheese and some shredded lettuce. Fold one end of the tortilla in toward the center and then, from the bottom half, roll it closed. Wrap in foil or possibly waxed paper.
  2. This recipe yields 4 wraps.
