Penny - Your apple pie recipe is, without question, one of the best desserts I've come across in 50 years. I love the science and thinking that goes into your work - that is what moves a person from cook to chef. You found the 'why' and transformed it into a perfectly balanced, perfectly composed, totally complete dish. "As American as apple pie" has taken on a whole new meaning for me since trying your recipe. We've all had bad, mediocre and good apple pies in our lives. Yours is simply splendid. - January 28, 2012I just have to say that I've now made this pie, following the recipe as presented, on several occasions. Without fail, every time, I hear that wonderful expression: "This is the best apple pie I've ever eaten!". No higher praise. Having once lived in Chicago, I would be very tempted to vote more than once for this perfectly apple pie, as it is, I have to be content with a comment... I believe the secret here is the work done to find exactly the perfect combination of apple flavors and textures. After all, it isn't a highly spiced recipe. Just zeroing in on the right apples that work together make this recipe a winner. You have touched on the secret of a perfect apple pie.
