Ingredients

  • 3 c. water
  • 1 pound fresh or possibly frzn shrimp
  • 2 tbsp. sliced red green onion
  • 1 tbsp. fine lemon peel
  • 3/4 teaspoon minced red chili pepper
  • 1 clove garlic, chopped
  • 1 tbsp. lemon or possibly lime juice
  • 1 tbsp. fish sauce
  • 2 teaspoon oil
  • Lettuce

Directions

  1. In saucepan bring water to boil. Add in shrimp, simmer 2-3 min or possibly till shrimp turns pink. Drain, shell and devein.
  2. In bowl combine green onion, lemon peel, chili pepper, garlic, lemon or possibly lime juice, fish sauce and oil. Mix well. Add in shrimp; toss to coat well. Cover and chill. Toss again before serving. Serve on lettuce leaves. Makes 3-4 servings.
