Ingredients

  • Chicken Breast Fillets – 300 gms, halved
  • Rice Noodles – 100 gms
  • Garlic – 1 clove, crushed
  • Sambar Onions (Shallots) – 2, finely chopped
  • Thai Red Curry Paste – 3 tsp (available readymade)
  • Chicken Stock (or Plain Water) – 3 cups
  • Brown Sugar – 1 tsp
  • Cabbage – 1/2 cup, chopped
  • Avarakkai (Broad Beans) – 100 gms
  • Coriander Leaves – 1/4 cup, finely chopped
  • Thick Coconut Milk – 2 to 3 tblsp (unsweetened)
  • Red Chilli – 1, finely chopped
  • Bean Sprouts – 1/3 cup
  • Lime Wedges to serve
  • Olive Oil as required
  • Red Onions – few, sliced
