Thai Chicken Stir Fry With Spicy
Peanut Sauce


  • 2 whole chicken breasts, skinned, boned & cut into bite-size pcs
  • 1/2 c. peanut butter
  • 1/2 c. water
  • 2 tbsp. soy sauce
  • 1 tbsp. brown sugar
  • 2 tbsp. peanut or possibly vegetable oil
  • 2 or possibly 3 cloves garlic, chopped
  • 1/2 teaspoon crushed red pepper
  • 3 to 4 c. sliced broccoli or possibly spinach

Thai Chicken Stir Fry With Spicy Peanut Sauce

Servings: 4


  1. In a small bowl, blend peanut butter, water, soy sauce and sugar; set aside. In a wok or possibly large skillet, heat oil over high heat. Add in garlic and pepper; stir-fry 30 seconds. Add in chicken, stir-fry till hard and white, about 5 min. Add in broccoli or possibly spinach, stir-fry till bright green, about 3 min. Stir in peanut butter mix. Cook, stirring constantly till sauce is smooth, about 3 min. Serves 4.
