Ingredients

  • 6 lb Pork butt
  • 1 bot Beer
  • 2 Tbsp. Black pepper, coarsely grnd
  • 2 Tbsp. Red pepper, crushed
  • 2 Tbsp. Cayenne pepper
  • 2 Tbsp. Paprika
  • 3 Tbsp. Kosher (coarse) salt
  • 2 Tbsp. Mustard seed
  • 1/4 c. Garlic, chopped
  • 1 Tbsp. Garlic pwdr
  • 1 Tbsp. MSG
  • 1 tsp Tender Quick
  • 1 tsp Bay leaf , grnd
  • 1 tsp Coriander
  • 1 tsp Thyme, dry

Directions

  1. Mix all spices with beer.
  2. Grind pork for sausage.
  3. Mix beer/spices thoroughly into the meat.
  4. Form into sausage links and grill or possibly smoke.
  5. Place in bun and slather heavily with mustard.
