Texas Hot Links Recipe

Ingredients

6 lb Pork butt 1 bot Beer 2 Tbsp. Black pepper, coarsely grnd 2 Tbsp. Red pepper, crushed 2 Tbsp. Cayenne pepper 2 Tbsp. Paprika 3 Tbsp. Kosher (coarse) salt 2 Tbsp. Mustard seed

1/4 c. Garlic, chopped 1 Tbsp. Garlic pwdr 1 Tbsp. MSG 1 tsp Tender Quick 1 tsp Bay leaf , grnd 1 tsp Coriander 1 tsp Thyme, dry

Directions

1. Mix all spices with beer.
2. Grind pork for sausage.
3. Mix beer/spices thoroughly into the meat.
4. Form into sausage links and grill or possibly smoke.
5. Place in bun and slather heavily with mustard.
