Texas Caviar

This is a modified recipe from a friend. The recipe is incredible simple. I serve this at almost every party I give, and never have any leftovers. I am constantly asked for this recipe so I thought I would just post it so anyone could have it.

Ingredients

  • 1 - 16oz bottle of zesty italian dressing
  • 1 can field peas, drained (I remove the snap peas)
  • 1 can of black-eyed peas with jalapenos, drained ( I remove the jalapenos)
  • 2-3 small tomatos seeded and chopped
  • 1/2 - 1 green pepper chopped
  • 1/2 large red onion chopped
  • 4-5 large avocaos
  • Mix all ingredients except for avocados in a large mixing bowl or storage container and refrigerate at least overnight. Just before serving, chop avocados and mix in to ingredients that marinated overnight.
  • Serve with torilla chips
