Tex-Mex Meatloaf

Meatloaf with a kick.

Goes Well With: Mexican Rice, Pinto beans

Ingredients

  • 1/2 cup crushed Saltines
  • 1/2 tbs. taco seasoning (see link for homemade)
  • 2 tbs. ketchup
  • 1 cup salsa, divided
  • 1 tbs. chopped olives
  • 1/4 cup chopped onion
  • 1 beaten egg
  • 1/2 tbs. Worcestershire
  • 1 lb. ground chuck
  • topping: salsa, shredded cheese
  • Condiments, sour cream, more cheese, salsa

Directions

  1. Heat oven to 350 F, or use microwave.
  2. Combine meatloaf ingredients in a bowl, form into meatloaf or use a bread pan.
  3. Pour on salsa, cover and 30 minutes or microwave in a glass container, covered for 12-15 minutes.
  4. Remove, top with cheese, cover and let rest 10 minutes before slicing.
