A Tex-Mex 101 recipe.

These are my favorite enchiladas.

Ingredients

  • 1 recipe Red Chile Gravy, or Easy Red Enchilada Sauce (see links)
  • 1 tbs. oil
  • 1/2 cup chopped onions
  • 1 lb. sharp ceddar cheese, shredded, or your favorite cheese
  • 1 tsp. taco seasoning or Tex-Mex Diablo Dust
  • 8 flour tortillas
  • Topping: 1 cup shredded Monterrey Jack or Pepper Jack Cheese
  • 3 tbs pico de gallo

Directions

  1. Make desired sauce.
  2. Heat oven to 350 F.
  3. Saute onions in oil, let cool, combine with cheese and taco seasoning.
  4. Put 1/4 of the red sauce in a baking pan.
  5. Divide cheddar cheese mix in 8 portions. Roll each portion in a enchilada, place seam side down in pan. Repeat.
  6. Top enchiladas with the rest of the sauce and Jack cheese.
  7. Bake 15-20 minutes, uncovered.
  8. Garnish with pico de gallo, sour cream, salsa, or cilantro.
