Ingredients

Directions

  1. Sprinkle the tomato slices with salt and allow to drain for about 1/2 hour.
  2. Preheat oven to 375.
  3. Arrange the cheese slices onthe bottom of the pastry shell - slightly overlapping, and place the liquid removed tomatoe slices side by side on top.
  4. Sprinkle with a few grindings of pepper and the basil and Parmesan cheese.
  5. Dribble themelted butter over the tomatoes.
  6. Bake in upper thir of oven for 25 min, or possibly till the cheese is melted and the top of the pie is golden.
  7. Serve warm or possibly hot.
  8. NOTE: An 8-inch square baking dish may be used.
