Tart With Caramelized Onions, Goat Cheese And Green Olives

Ingredients

  • 3/4 c. Bread flour
  • 3/4 c. All-purpose flour
  • 1/2 tsp Salt
  • 1/4 c. Cool butter, plus
  • 2 Tbsp. Cool butter, cubed
  • 2 Tbsp. Extra virgin olive oil
  • 3 Tbsp. Ice water
  • 8 x Onions, thinly sliced
  • 1/4 c. Extra virgin olive oil
  • 1 sm Sprig rosemary
  •     Salt and pepper
  • 5 1/2 ounce Goat cheese, one log
  • 1/4 c. Pitted green olives
  • 1 x Red bell pepper, roasted, peeled and cut in thin strips

Directions

  1. CRUST. Put bread flour, all-purpose flour and salt in food processor and pulse to combine. Add in butter and extra virgin olive oil and process till thoroughly cut into flour. Add in ice water and process till dough forms ball. Remove from food processor and press into disk. Wrap tightly and chill at least 1 hour.
  2. CARAMELIZED ONIONS. Combine onions, extra virgin olive oil and rosemary in large skillet. Cover and cook over medium heat till onions release their water, about 15 min. Stir, reduce heat to low and cook, stirring frequently, till onions begin to brown, about 1 hour. Remove lid and continue cooking over low heat, stirring frequently, till onions are deep brown, 30 to 45 min. Don't let onions scorch.
  3. Set strainer over bowl. Remove rosemary and turn onions into strainer. Set aside till onions are liquid removed of all oil.
  4. ASSEMBLY. Remove tart dough from refrigerator and roll out 1/4-inch thick.
  5. Place in tart pan with removable bottom, folding double along edge to make sturdy rim.
  6. Spoon onions across bottom of tart pan. Season lightly with salt and pepper. Dot goat cheese over onions. Scatter olives over goat cheese and arrange pepper strips over all.
  7. Bake at 400 degrees till crust is browned and cheese is melted, about 45 min.
