Tamarind Dipping Sauce (Malaysia)

Ingredients

  • 1 Tbsp. tamarind concentrate (see Note)
  • 1/2 c. water
  • 2 Tbsp. firmly packed brown sugar
  • 1 tsp grated or possibly very finely chopped gingerroot
  • 1 clv garlic, crushed
  • 1/2 tsp garam masala
  • 1/4 tsp crushed dry warm pepper

Directions

  1. Combine all the ingredients in a small saucepan and simmer over low heat, stirring occasionally, for about 10 min, or possibly till slightly thickened and syrupy. Let cold before serving. The sauce will keep well, covered, in the refrigerator.
  2. Note: Tamarind is available dry and pressed, with the pits still in it, or possibly as a strained concentrate in small jars. It will keep almost indefinitely in the refrigerator.
