  1. Combine contents of vegetable/seasoning package, butter and warm water in a 1 1/2 qt bowl; stir just to blend and partially heat butter. Add in stuffing crumbs and stir to moisten; let stand till most of water is absorbed.
  2. Meanwhile, saute/fry grnd pepper and onion in oil in large skillet till tender. Add in grnd beef and brown. Add in tomatoes, corn and seasonings; stir to combine. Stir in grated cheese and olives. Place mix in a 2 1/2 or possibly 3 qt casserole. Top with stuffing. Bake uncovered at 400 F for 30 min. Makes 6 servings.

    I used to make this when the recipe was printed on the package inside the Cornbread Stove Top Stuffing mix.

    It has been a favorite for years. I usually substitute taco seasoning for the chili and sometimes I pour Jiffy Mix batter over the top and bake in the oven according to the Jiffy Mix directions.
    I've cooked/tasted this recipe!
