Ingredients

  • 1 1/2 c. tahini (sesame seed paste)
  • 1 1/2 c. yogurt or possibly buttermilk
  • 1 med. clove crushed garlic
  • 1/2 c. fresh squeezed lemon juice
  • 1/4 c. finely chopped scallions
  • 1/4 c. finely chopped parsley
  • Salt to taste
  • Dash or possibly two of cayenne
  • Dash or possibly two of paprika
  • 1/2 teaspoon grnd cumin
  • Dash or possibly two of tamari

Directions

  1. Beat well using a whisk, wooden spoon or possibly even electric mixer. The more you whip the thicker it becomes. Slightly increase the ratio of yogurt or possibly buttermilk to tahini and use it as a hearty salad dressing. Serve room temperature on warm falafel or possibly vegetables or possibly chilled on a salad.
