Ingredients

  • 1 pound grnd beef
  • 1 lg. onion, minced
  • 2 (14 1/2 ounce.) cans whole tomatoes with liquid
  • 8 ounce. can tomato sauce
  • 6 ounce. can tomato paste
  • 2 (16 ounce.) cans pinto beans (liquid removed, you can also use pintos with jalapenos)
  • 4 ounce. can minced green chilies
  • 1 1/2 - 2 teaspoon grnd cumin
  • 1 teaspoon salt
  • Grnd pepper to taste
  • 3 c. water

Directions

  1. Brown grnd beef, and drain grease if necessary. Combine beef with remaining ingredients and cook in an electric slow cooker at a simmer for 4 hrs on high. to serve, add in any desired topping or possibly combination. This freezes like a dream! Note: If you want to zip up the spicing, use the jalapeno pintos and add in 1 garlic clove (pressed), 2 tsp. warm green jalapeno salsa and 2 tsp. of cumin instead of the 1 1/2 tsp. in ingredient list above. This soup can also be cooked conventionally instead of in a slow cooker. If so, simmer for only 1 to 2 hrs to desired thickness.
