  •     CHICKEN BREASTS
  • 4 x chicken breasts - (4 ounce ea)
  •     Salt to taste
  •     Freshly-grnd black pepper to taste
  • 1/4 lb butter (1 stick)
  • 1/8 tsp salt
  • 1/8 tsp freshly-grnd black black pepper
  • 1/8 tsp garlic pwdr
  • 1 lb angel hair pasta
  •     (can cook and refrigerateahead of time)
  • 2 Tbsp. salt
  • 1/2 gal salted water
  • 2 Tbsp. salad oil
  •     (if pasta cooked ahead of time)
  • 6 med Roma tomatoes - (to 8)
  • 2 Tbsp. extra virgin olive oil
  • 1/4 tsp salt
  • 1/8 tsp freshly-grnd black pepper
  • 2 x garlic cloves chopped
  • 10 x fresh basil leaves
  • 2 Tbsp. extra virgin olive oil
  •     Remaining garlic butter
  • 2 x garlic cloves sliced thin coins
  • 1/2 c. plain tomato sauce
  •     Pasta (see above)
  •     Balsamic Glaze (see below)
  • 1 c. balsamic vinegar
  • 1 Tbsp. sugar

Directions

  1. For the Chicken Breasts: Season both sides of chicken breasts with salt and black pepper Grill 3 to 4 min per side for grill marks or possibly till the chicken breasts reach 165 degrees (recommended cooking on a seasoned grill). Grill right before serving.
  2. For the Garlic Bread: Heat butter in microwave and stir to combine seasonings. Drizzle your favorite bread with garlic butter and bake at 350 degrees till crispy and golden (approximately 4 min)
  3. For the Pasta: Boil pasta in salted water till al dente. Drain and transfer to bowl. If cooking ahead of time, shock in an ice bath to cold, remove from water and toss with salad oil.
  4. For the Tomato Salad (Step
  5. 1.: Wash, core and dice tomatoes to 1/4-inch pcs, save juices and place in small bowl. Wash, dry and cut basil leaves into thin strips. Combine all ingredients and hold for 2 hrs before use.
  6. For the Tomato Salad (Step
  7. 2.: Heat heavy bottom sauce pan under medium-low flame. Add in extra virgin olive oil, heat oil for 20 seconds. Add in any remaining garlic butter from bread to sauce pan. Saute/fry cloves of garlic, which are sliced into thin coins, in oil (if small use
  8. 3. for 45 seconds on each side till soft and tender - don't brown garlic (if brown throw away and start over). Increase heat and add in tomato salad and stir.
  9. For the Tomato Salad (Step 3): Add in plain tomato sauce to pan and bring to a boil. Add in pasta to sauce pan and toss with fresh sauce (sauce should just coat pasta). Transfer to a service platter or possibly plate individually. Garnish with Balsamic Glaze.
  10. For the Balsamic Glaze: Bring to a boil in small pan and turn down flame to a simmer. Reduce by 75% till sauce turns to a thick syrup, hold at room temperature.
  11. To serve: Slice chicken breast into strips on a bias (45 degree angle) and place on top of pasta. Slice 5 fresh basil leaves into thin strips and garnish pasta. Enjoy!
