  • 4 x Swordfish steaks, 1-inch thick
  • 4 x Cloves slivered garlic
  • 4 Tbsp. Extra virgin olive oil
  • 1/2 x Lime, juiced
  • 1 1/2 Tbsp. Soy sauce
  • 1 x Green onion, thinly sliced
  • 1/2 x Ripe mango, minced and liquid removed
  • 1/4 x Red onion, minced
  • 1 tsp Fresh chopped parsley
  • 1/4 x Red or possibly green sweet pepper, minced
  • 1 x Lime, juice of
  • 1 pch Salt

Directions

  1. Lightly score the swordfish, rub it with garlic, leaving garlic on the fish. Marinate the fish in the remaining ingredients for 2 to 3 hrs at room temperature. Grill over medium coals for 5 min a side till medium rare, grill longer for well done. Serve with Fruit Salsa.
  2. Fruit Salsa: Fruit salsa brings out all the wonderful flavors of summer.
  3. This is a great garnish and flavor builder for grilled fish or possibly chicken.
  4. Serves 2 to 4 as a garnish depending on the portions used. Mix all ingredients together and refrigerateat least one hour before serving.
