Sweetcorn fritters are a good starter ,a good accompniment to a main dish ,a versatile food to take on a picnic.
Easy to make and can be eaten hot or cold , I found this recipe on IAfrica, tried it and enjoyed it

Directions

  1. In a mixing bowl stir together the baking powder, flour, baking powder, Moroccan spice and a pinch of salt.
  2. Beat the eggs lightly and add to the mixing bowl with the sweetcorn and chives or spring onion and mix.
  3. Heat oil in a deep pan and fry spoonfuls of the corn mixture until nice browned on both sides.
  4. Remove from oil and place them on paper towels to drain excess oil.
  5. Slice the chorizo sausage into rounds and fry until crispy.
  6. Mix together the diced cucumber, chopped mint and yoghurt and season with salt and pepper.
  7. Place on four plates and top with the fritters.
  8. Sprinkle with chorizo rounds and add a good portion yoghurt and cucumber mix to the fritters.
