  • 6 slc bacon medium diced
  • 1 x red onion finely sliced
  • 3 x garlic cloves finely minced
  • 3/4 c. white wine vinegar
  • 1/2 c. extra virgin olive oil
  • 2 Tbsp. granulated sugar
  • 4 x sweet potatoes peeled, cooked,
  •     and cut into 1" dice, kept hot
  •     Salt to taste
  •     Freshly-grnd black pepper to taste
  • 4 x green onions finely sliced
  • 1/4 c. minced parsley

Directions

  1. Heat pan over high heat. Add in bacon and cook till just crisp. Remove bacon to a towel-lined plate. Pour off all but 2 Tbsp. of the fat.
  2. Add in onions and garlic and cook till soft. Remove pan from heat, add in vinegar, extra virgin olive oil, sugar and reserved bacon.
  3. Place the potatoes in a large bowl, pour the dressing over and season with salt and pepper. Mix in the green onions and parsley. Serve at room temperature.
  4. This recipe yields 8 servings.
