Directions

  1. Wash and clean leeks and chop fine.
  2. Peel and chop the onions.
  3. Peel core and chop 3/4 of the apples.
  4. Peel and chop seet potatoes.
  5. Heat butter in a saucepan and gently saute/fry onion and leek till soft. Add in apples, sweet potatoes and stock, bring to the boil, and simmer till potatoes are tender, about 30 min.
  6. Puree in blender, reheat in a clean saucepan, add in cream and season. Thin slightly with lowfat milk if required.
  7. Peel, core and dice remaining apple for garnish.
  8. Serve with an extra swirl of cream, diced apple and fresh minced chives.
