Ingredients
- 3 c. cooked, mashed sweet potatoes
- 1/2 teaspoon salt
- 1/3 stick butter
- 1 teaspoon vanilla
- 2 lightly beaten large eggs
- 1/2 c. lowfat milk
- 1 c. brown sugar
- 1/2 c. self-rising flour
- 1/2 stick butter
- 1 c. minced nuts (pecans)
- 1 c. coconut
Directions
- Put together mashed sweet potatoes, salt, butter, vanilla, large eggs and lowfat milk. Pour into 8x9x2 casserole dish.Put together by hand: brown sugar, self-rising flour, butter, nuts and coconut. Spread over potato mix. Bake at 350 degrees till topping is brown (30 min).
