Sweet Melon Magic in a Bowl Recipe

This one dessert we use to wait for during the long Indian summers back when we were kids having fun during our summer school hols. My mum used to make this quite often with any kind of melon that was available...mostly with honey dew melons. You can add/substitute watermelon or musk melon to this too.

  • 3 cups diced Honey dew or Rock melon(I used a combination of both)
  • 6 Cups thick coconut milk
  • 1/4 cup raisins or sultanas,soaked in 1/2 cup warm water
  • 1 and a 1/2 cup brown sugar
  • 2 tsp cardamom powder
  • 1 tbsp saffron soaked in 1/4 cup warm water

Directions

  1. Sugar in a big Punch bowl and mix till sugar dissolves.
  2. Add the diced melon pieces to the sweetened coconut milk and give it a good stir.Add cardamom powder and mix.
  3. Now add the soaked saffron along with the water...followed by the soaked raisins and its water.
  4. Mix everything very well.
  5. Refrigerate this for 2 hours and serve as dessert.
