Sweet Irish Cream Bran Cakes

Ingredients

  • 2 x Large eggs
  • 1/3 c. Bailey's Irish Cream
  • 1 c. Lowfat milk
  • 3 c. All-Bran breakfast cereal
  • 1/4 c. All-purpose flour
  • 1/4 c. Whole-wheat flour
  • 1/4 c. Brown sugar, firmly packed

Directions

  1. Preheat oven to 400 degrees Fahrenheit; grease baking sheet.
  2. Mix together all ingredients thoroughly. Allow to stand approximately 10 min till liquid has been absorbed.
  3. Spread into 8-10 patties or possibly squares on baking sheet. These don't spread so they can be placed closely together (about 1/2" apart). Bake about 20 min or possibly till slightly crisp. Remove from oven; move to cooling racks to cold thoroughly.
  4. Makes approximately 8-10 patties.
