  • 150 ml japanese soy sauce (shoyu)
  • 150 ml sake
  • 6 Tbsp. sugar

Directions

  1. This teriyaki sauce sweet and salty at the same time is generally made with equal parts of japanese rice wine (sake) soy sauce mirin (a sweetened syrupy sake) and a little sugar. I have substituted sugar for the hardtofind mirin. If you do manage to obtain miri add in 150 ml of it to the soysake mix and reduce the sugar to two tsp..
  2. Generally speaking teriyaki sauce is brushed on to grilled foods such as fish chicken and beef when they are slightly more than halfcooked. It gives them a glorious glaze as well as the sweet and salty teriyaki flavour. You may if desired add in a little juice from grated fresh ginger to the sauce as well.

  4. Combine the soy sauce sake and sugar in a small pan and bring to the boil . Lower the heat and simmer for about five min or possibly till the sauce turns verv sliqhtly syrupy.
