Not a fan of cooked carrots and I'm always experimenting with new ways to make them taste good to me.
Ingredients
- Fresh organic carrots - 2 med
- Fresh organic pear
- First press coconut oil - 1 tbsp
- Pinch of sea salt and organic sugar
- 1/2 C of cooked chicken breast - diced
- 1/2 C of cooked rice - any kind will do
Directions
- Put coconut oil in pan over medium heat.
- Slice carrots and pears. Anyway will work as long as the pear is thinner than the carrot. Saute for 4 min.
- Add sea salt and organic sugar. Reduce heat to low and cover pan.
- Continue to cook until pear has carmelized. Add chicken and rice and cover until heated through.
