Sweet Carrots with Chicken and Rice Recipe

Not a fan of cooked carrots and I'm always experimenting with new ways to make them taste good to me.

Ingredients

  • Fresh organic carrots - 2 med
  • Fresh organic pear
  • First press coconut oil - 1 tbsp
  • Pinch of sea salt and organic sugar
  • 1/2 C of cooked chicken breast - diced
  • 1/2 C of cooked rice - any kind will do

Directions

  1. Put coconut oil in pan over medium heat.
  2. Slice carrots and pears. Anyway will work as long as the pear is thinner than the carrot. Saute for 4 min.
  3. Add sea salt and organic sugar. Reduce heat to low and cover pan.
  4. Continue to cook until pear has carmelized. Add chicken and rice and cover until heated through.
