Sweet and Spicy Barbecue Sauce

Ingredients

  • 1 medium onion, chopped
  • 1 TBSP oil
  • 1 garlic clove, minced
  • 1 to 3 tsp chili powder
  • 1/4 tsp cayenne pepper
  • 1/4 tsp coarsely ground pepper
  • 1 cup ketchup
  • 1/3 cup molasses
  • 2 TBSP cider vinegar
  • 2 TBSP Worcestershire sauce
  • 2 TBSP spicy brown mustard
  • 1/2 tsp hot pepper sauce

Directions

  1. In a large saucepan, saute onion in oil until tender.
  2. Add garlic; cook 1 minute.
  3. Stir in the chili powder, cayenne and pepper; cook 1 minute longer.
  4. Stir in the ketchup, molasses, vinegar, Worcestershire sauce, mustard and pepper sauce.
  5. Bring to a boil.
  6. Reduce heat; simmer, uncovered, for 30-40 minutes or until sauce reaches desired consistency.
  7. Cool for 15 minutes.
  8. Strain sauce through a fine mesh strainer over a large bowl, discarding vegetables and seasonings.
  9. Store in an airtight container in the refrigerator for up to 1 month. Use as a basting sauce for grilled meats
