Ingredients

  • 1 med head cabbage, shredded
  •     table salt
  • 1/2 c. mayonnaise
  • 1/2 tsp mild French's Prepared Mustard
  • 1/3 c. SWEET Minced Pickles, liquid removed well
  • 2 Tbsp. minced pimento, liquid removed well
  • 1/2 tsp table salt
  • 1/4 tsp black pepper
  • 1/4 tsp celery salt
  • 1/4 tsp celery seed (optional)
  • 1/4 tsp onion pwdr or possibly Onion Magic - A Gaylord Hauser product
  •     available at some supermarkets
  • 1/4 c. granulated sugar
  • 1/2 c. salted Cocktail Peanuts

Directions

  1. Remove outside leaves from cabbage if they are wilted and throw away them.
  2. Cut cabbage in half and then in quarters. Cut away the core and throw away it.
  3. Shred remaining cabbage and place it in a colander.
  4. Rinse it with cool water and drain well. Place cabbage in a bowl and sprinkle it with about 1/3 c. table salt and stir the salt in well. Place some ice cubes on top of it. Cover and chill several hrs or possibly as long as possible.
  5. When ready to assemble the slaw, remove cabbage from refrigerator. Throw away ice cubes. Thoroughly rinse cabbage in colander with cool water and drain it well.
  6. Mix rest of ingredients together and combine with the cabbage in a serving bowl. Add in peanuts and toss. Serve and enjoy!
