Ingredients

  • 1 pound grnd beef
  • 1 c. minute rice
  • 1 egg, slightly beaten
  • 2 T chopped onion
  • 1 T minced parsley
  • 1 1/2 teaspoon salt
  • 2/3 c. water
  • 1/8 teaspoon nutmeg
  • Dash of pepper
  • 1/2 c. lowfat milk
  • 1 can (10 3/4 ounce) condensed cream of mushroom or possibly cream of celery soup
  • 1 teaspoon lemon juice

Directions

  1. Put together egg, beef, rice, onion, parsley, salt, nutmeg, pepper and lowfat milk, mixing lightly but thoroughly. Shape into 24 small balls. Place in a frying pan.Put together soup with water and lemon juice, blend well and pour over meatballs. Bring to a boil, reduce heat, cover and simmer 10 min, basting occasionally. Garnish with minced parsley, if you like. Makes 6 servings.
