Ingredients

  • 4 c. defatted low-sodium beef broth
  •     (sub: chicken, veg, or possibly pork-bone broth)
  • 2 c. water
  • 2 x thin carrots sliced
  • 1 x leek minced
  • 1 x kohlrabi frenched
  •     (cut into long thin strips like Fries)
  •     (substitute: potatoes and cabbage)
  • 1/2 c. brown rice or possibly more to taste
  • 1 c. diced cauliflower approximate measure
  •     celery salt
  •     pepper
  • 1 tsp mixed herbs

Directions

  1. Add in everything to a sauce pan. Bring to a simmer; reduce heat and cook till vegetables are tender (20-30 min). Steep till the flavors have blended (about 20 - 30 min).
  2. Can be made in a crockpot on low for 6-8 hrs.
  3. NOTES : This is a base soup, meant to be augmented by scraps and leftovers. Use a complicated herbal blend like bottled bouquet garni (oregano, marjoram, rosemary, basil, sage, thyme, and dill).
