Ingredients
- 4 c. defatted low-sodium beef broth
- Â Â (sub: chicken, veg, or possibly pork-bone broth)
- 2 c. water
- 2 x thin carrots sliced
- 1 x leek minced
- 1 x kohlrabi frenched
- Â Â (cut into long thin strips like Fries)
- Â Â (substitute: potatoes and cabbage)
- 1/2 c. brown rice or possibly more to taste
- 1 c. diced cauliflower approximate measure
- Â Â celery salt
- Â Â pepper
- 1 tsp mixed herbs
Directions
- Add in everything to a sauce pan. Bring to a simmer; reduce heat and cook till vegetables are tender (20-30 min). Steep till the flavors have blended (about 20 - 30 min).
- Can be made in a crockpot on low for 6-8 hrs.
- NOTES : This is a base soup, meant to be augmented by scraps and leftovers. Use a complicated herbal blend like bottled bouquet garni (oregano, marjoram, rosemary, basil, sage, thyme, and dill).
