Sun Dried Tomato And Goats Cheese Sauce Recipe

Ingredients

  • 25 gm Butter, (1oz)
  • 2 Tbsp. Extra virgin olive oil
  • 1 x Garlic clove, minced finely
  • 1 x Onion, minced finely
  • 2 lrg Carrots, minced finely
  • 2 x Celery sticks, minced finely
  • 1 x 397 gram can minced tomatoes, (14oz)
  • 125 gm Pomodori Secchi, (sun-dry tomatoes in seasoned oil), liquid removed and minced roughly (4oz)
  • 125 ml White wine, (4 fl ounce)
  • 8 x Calamata olives
  •     Salt and pepper
  •     Fresh parsley sprigs, preferably flat-leaf, to garnish

Directions

  1. 1. Heat the butter and oil in a saucepan.
  2. 2. Add in the garlic, onion, carrot and celery and fry for 10 min, till slightly softened, stirring frequently.
  3. 3. Stir in the tomatoes, sun-dry tomatoes and wine.
  4. 4. Season to taste.
  5. 5. Simmer, covered, for about 30 min, stirring occasionally.
  6. 6. Toss the sauce, goat''s cheese and olives with freshly cooked pasta.
  7. 7. Garnish with fresh parsley sprigs.
  8. NOTES : Although the ingredients for this sauce are currently popular, both sun-dry tomatoes and goats cheese have been around for centuries! Serve it with farfalle.
