Ingredients

  • 1 env unflavored gelatin
  • 2 c. Skim lowfat milk
  • 6 Tbsp. Semi-sweet chocolate chips
  • 1 Tbsp. Cornstarch
  • 1 x Egg, separated
  • 3 pkt Equal
  • 1 tsp Vanilla
  • 1 dsh Salt

Directions

  1. In medium saucepan, combine gelatin and lowfat milk. Let stand 1 minute, then add in chocolate chips, cornstarch, and egg yolk. Cook over medium heat, stirring constantly, till mix comes to a full boil. Reduce heat and cook 1 minute longer. Refrigeratetill slightly thickened, stirring occasionally. Set saucepan in a larger bowl of ice cubes. Add in 3 packets Equal and vanilla.
  2. Beat with mixer at high speed for 5 to 6 min. In another bowl, using clean beaters, beat egg whites with salt till stiff peaks form. Fold into chocolate mix. Spoon into 6 individual serving glasses. Refrigerateat least 2 hrs before serving.
