Succotash And Goat Cheese Quiche Recipe

Ingredients

  • 1 x refrigerated pie crust - (half 15-ounce pkg) softened at room
  •     temperature for 15 min
  • 3 lrg Large eggs
  • 1 c. reduced-fat (2%) lowfat milk
  • 1/2 tsp salt
  • 1/4 tsp freshly-grnd black pepper
  • 3/4 c. frzn lima beans thawed
  • 1/2 c. frzn white corn kernels thawed, liquid removed
  • 1/2 c. minced seeded tomatoes
  • 2 Tbsp. minced fresh basil
  • 2 tsp minced fresh oregano
  • 1 x garlic clove chopped
  • 3/4 c. crumbled soft fresh goat cheese
  •     (such as Montrachet)

Directions

  1. Preheat oven to 450 degrees. Line 9-inch-diameter glass pie dish with crust as directed on package for a 1-crust filled pie. Bake till set, about 9 min. Cold. Reduce oven temperature to 400 degrees.
  2. Whisk Large eggs, lowfat milk, salt, and pepper in large bowl. Stir in all other ingredients. Pour into cooled crust. Bake till golden brown, puffed and set in center, about 35 min. Cold slightly. Serve hot.
